more muffins

Every week I buy bananas hoping that this might be the week Little Pilot will take a liking to them.  I also don’t eat them myself as I keep thinking that I should save them to give to Little Pilot.  So, long story short, I am, once again, at the end of my week with overripe bananas.  I didn’t want to bake the same banana bread as I usually do, so muffins it was!  I wanted to add something to muffins and all we had were frozen blueberries.  We have an abundance of berries in our freezer thanks to, Mummu, our avid berry-picker.  I think that us Finns just have to have our berries! :)


Banana Blueberry Muffins

2-3 ripe bananas mashed

250 g flour
1 tsp baking powder
1/2 tsp baking soda
pinch of salt
2 eggs
125 g unsalted butter melted
125 g light brown sugar
1 tsp pure vanilla extract
1 cup frozen blueberries
Preheat oven to 375 F.  Mash bananas in a bowl and set aside.  In another bowl, mix dry ingredients together and set aside.  Beat eggs and melted butter together.  Add in brown sugar and mix.  Add vanilla and mix until well combined.  Add dry ingredients into the egg mixture and mix until batter just comes together.  Add in mashed bananas and mix until combined.  Lastly, fold in blueberries.  Divide batter equally into a paper cup -lined/greased muffin tin and bake for 15-20 minutes.
These muffins turned out really light and fluffy and were voted by Tech Guy as the best muffins ever.  Perhaps, he was just really hungry. :)
