GINGER MOLASSES COOKIES

Happy fall everyone!  I have been pretty busy photographing our kitchen.  Finally!  I am hoping to share it here by the end of this week or early next week.  So instead of sharing my kitchen with you today, how about some ginger molasses cookies?  They were made in my kitchen so they're kind of related to my kitchen.  Kind of. Sort of. :)

I have been craving ginger molasses cookies lately.  It must be the change to cooler temperatures.  These cookies are the perfect fall treat.  They are crispy around the edges and chewy in the centre.  They also have just the right amount of spice and molasses.  We make a few different types of molasses/ginger cookies around here and these are Tech Guy's fave!

Here's the recipe {keep scrolling through to see some of my almost three year-olds cookie modelling skills :) }:

Ginger Molasses Cookies

Ingredients:

2 cups all-purpose flour (scooped)
1 teaspoon baking soda
1 teaspoon cinnamon
1 teaspoon ground ginger
1/2 teaspoon ground allspice
1/2 teaspoon coarse salt

1/2 cup unsalted butter (room temperature)
1 cup packed light brown sugar
1/2 cup granulated sugar
2 large eggs
1/2 cup unsulfured molasses
2 tablespoons canola oil (or any vegetable oil)
raw sugar for rolling (about 1/4 cup)

Directions:

  1. Sift the dry ingredients together in a bowl and set aside.
  2. Cream together butter and sugars in an electric mixer.
  3. Add in eggs one at a time with mixer at medium speed.
  4. Add in molasses followed by oil and mix.  (I like to turn off my mixer to put in the molasses and then start it again since molasses tends to stick allover the bowl if you add it in while at speed)
  5. With your mixer at low speed add in your sifted, dry ingredients.
  6. Wrap the dough in some cling wrap and refrigerate for a couple hours - overnight.  The dough is pretty soft so you want it pretty well chilled before you can roll it.  (I have placed my dough in the freezer for about 1/2 hour to get it to firm up a little faster if I can't wait).
  7. Preheat oven to 325 F.   Place the raw sugar in a bowl.  Roll the dough into 1.5"  balls and roll in the sugar.  Place the sugar-coated balls on a parchment-lined baking sheet and bake 15-17 minutes (cookies are done when the edges look crispy and the middles are set).

Now for the cookie model. :)  We started off holding the cookie nicely.

It was also presented for your eating pleasure sur la tete!  How's that for food composition? ha!

There was also lots of tasting and a couple smooshed ginger molasses cookies.
