peppermint vanilla latte

I am a sucker for Starbucks lattes.  I especially love the winter-themed ones such as peppermint white mocha and peppermint latte (anything peppermint for that matter :) ).  I probably have spent way too much money at Starbucks (yikes!).  I am happy to say that now we have our own espresso machine (scored super cheap at a clearance outlet).  Tech Guy bought me some of that Starbucks espresso roast and I have been concocting drinks ever since and keeping the money out of Starbucks corporate hands.  Mummu has been known to arrive at her regular visits to Nalle’s House asking for my now famous lattes.
So back to my love of peppermint.  One of the lattes I made was peppermint vanilla and it is deee-liche!  You’ve gotta try this one.

Peppermint Vanilla Latte

for syrup:
1 cup water
1 cup sugar
1 tsp pure peppermint extract
1/2 tsp pure vanilla extract
for latte:
1/8 cup espresso or 1/4 cup super strong coffee
1 cup steamed milk
1-2 tbsp peppermint vanilla extract
*optional crushed peppermint candies to garnish
To make syrup, combine 1 cup water with one cup sugar in a small saucepan.  Bring water to a boil stirring to dissolve sugar.  Boil water and sugar for about 1-2 minutes or until desired syrup consistency is reached.  Remember the thicker your syrup the more concentrated (sweet) it will be (I prefer mine to be a bit runny so that I get less sugar per tbsp).  Allow your syrup to cool slightly (about 5 min or so) and then add peppermint and vanilla extracts.  Cover pan and let cool completely.  Store syrup in a airtight jar in the fridge.
To make your latte add 1-2 tbsp syrup to your mug followed by your hot espresso and steamed milk.  Voila, a cup of pure pepperminty bliss!
